Pregnancy Snacks On The Go: Healthy Apple Cinnamon Muffins

One of the things lots of women find hardest during pregnancy is eating snacks that are healthy whilst still being filling enough! Well, don’t worry, because we have all of the healthy pregnancy snacks you need that will tackle symptoms, keep you feeling fuller for longer, and get you the right nutrients at the right time.

Before we get to our new muffin recipe, we’re taking a quick look at some key nutrients and snack recipes for each trimester of pregnancy to get you started. Just remember that throughout pregnancy, a balanced and nutrient-rich diet is key – and you should be aiming to get a variety of nutrients right throughout your pregnancy!

Pregnancy snacks for the first trimester 

In the first trimester, folic acid (called folate in its natural form) is important as it helps to prevent something called neural tube defects (or NTDs) such as spina bifida. Find out more in this post.

Pregnancy snacks for the second trimester 

Both calcium and iron are important for baby’s development in the second trimester. Calcium helps to strengthen your baby’s growing bones and teeth whilst iron helps support your body to make more blood to supply oxygen to your baby– it’s pretty awesome what our bodies can do, right?

Pregnancy Snacks On The Go: Healthy Apple Cinnamon Muffins 

Approx 12 apple cinnamon muffins | Prep: 10 minutes | Cook time: 30 minutes

These Healthy Apple Cinnamon Muffins are suitable for all three trimesters of pregnancy and make a great pregnancy snack — with added hemp seeds you’ll get an extra protein boost as well as some brain food for your baby in the form of Omega 3 and Omega 6 fatty acids.

To save a bit of time in the mornings, make these Apple Cinnamon muffins the night before so that they are ready when you wake up...if you can resist eating them the night before! Then you have pregnancy snacks for the week & know that when it gets busy, you can grab your apple cinnamon muffin & stay healthy!

What you’ll need: 

  • 2.5 cups oats 

  • 2 TBSP hemp seeds

  • ¾ cups dates, pitted and chopped

  • ½ cup boiling water 

  • 1 large apple, cored and diced 

  • 1 cup blueberries, washed 

  • ¾ cup milk 

  • 2 eggs 

  • 1 tsp vanilla 

  • 2 tsp baking powder 

  • ½ tsp baking soda 

  • 1 tsp cinnamon

  • ½ tsp salt 

Here's how to make it: 

  1. Preheat the oven to 170˚C / 350˚F and line a muffin tin with muffin papers.

  2. In small bowl pour boiling water over the pitted dates and allow to sit for 5 minutes.

  3. Put the oats and hemp seeds into the blender and blend until smooth. Remove and set aside.

  4. Pour the dates and water into the blender and blend until smooth.

  5. Add the apples and milk to the blender. Blitz until smooth.

  6. Add all remaining ingredients (including the ground oats and hemp seeds) except the blueberries to the blender and mix together.

  7. Chop the blueberries into halves or quarters

  8. Remove the blender jar from the base for safety and stir in the blueberries.

  9. Pour the batter into the muffin papers, filling them ⅔ full

  10. Bake for 30-35 minutes until the apple cinnamon muffins are cooked (tip: stick a toothpick into the center of a muffin should come out clean)

Enjoy these muffins warm or cold as a great pregnancy snack — if you have them for breakfast, pair them with a small yogurt pot for a healthy and balanced start to the day!
